Pici Pasta Workshop

This pasta workshop was designed to introduce guests to the simple, the very physical craft of making pici, a traditional hand-rolled pasta that relies entirely on touch, patience, and repetition. Unlike many pastas, pici is not run through a machine, neither hand-cranked nor electric. Every step is done by hand, kneaded, rolled, cut, and rolled again. It is honest work, and that effort is part of what makes it so rewarding.

What continues to surprise me is how quickly people take to pasta making. Each time I run a workshop, the experience improves, and this evening was no exception. At the beginning, when the flour and water first come together, and guests start hand-kneading the dough, it is easy to lose faith that it will ever become smooth. I tell everyone to stay with it. After a little time and persistence, it does come together. Then, after about thirty minutes of resting, the dough transforms into something silky and supple, a change that feels almost magical.

I reminded the participants to feel proud of themselves, and I believe they did. The room was filled with focus, laughter, and the quiet satisfaction that comes from learning something new with your own hands. While the dough rested, we stepped outside to enjoy a glass of wine and the beautiful evening, watching the sunset from what I truly believe is the best view around.

A moment that stayed with me came when a couple from our first bread-making workshop showed me a video of the bread they had been baking together at home. Seeing the continuation of the craft made my eyes water with pride and joy. It reminded me that these workshops are not just about a single evening; they are about giving people the confidence to carry the experience forward.

What this workshop reinforced for me is how powerful shared learning can be. If someone attempted this alone at home, they might lose patience and give up. In a room filled with camaraderie and encouragement, people keep going, and they succeed.
